  • 600 g mljevene janjetine
  • 100 g luka
  • 2 ?ešnja ?ešnjaka
  • ½ kasikice papra
  • 2 kasikice vegete
  • ½ kasikice soli
  • ulje za pe?enje

PRIPREMA

  1. Mljeveno meso stavite u dublju zdjelu. Dodajte nasjeckani luk, protisnuti ?ešnjak, papar, Vegetu i sol.
  2. Pripremljenu smjesu dobro izmiješajte, a zatim oblikujte pljeskavice.
  3. Pripremljene pljeskavice pecite na zagrijanoj, uljem premazanoj rešetki roštilja ili u tavi na ulju.

  • 500 g Brasna
  • 0 g maslaca
  • 12 g soli
  • 40 g svježeg kvasca
  • 300 ml mlake vode

PRIPREMA

  1. Kvasac razmrvite, dodajte malo še?era i 50 ml mlake vode pa ostavite na toplom mjestu oko 10 minuta.
  2. Prosijanom brašnu dodajte sol i kvasac pa pomiješajte s preostalom vodom.
  3. Umiješajte rastopljeni maslac i zamijesite glatko tijesto. Ostavite neka se diže na toplom mjestu oko 30 minuta.
  4. Tijesto premijesite, oblikujte štrucu i stavite u namaš?eni kalup. Prije pe?enja tijesto stavite još jedanput dizati.
  5. Zarežite ga nožem i poprskajte vodom, stavite u zagrijanu pe?nicu na 225°C i pecite oko 10 minuta, a zatim smanjite na 170°C i pecite još 35 minuta.

SASTOJCI

  • 800 gr junetine od rebara (flam)
  • 2 glavice luka
  • 4 ?ešnja ?ešnjaka
  • 400 gr smrznutog povr?a za bosanski lonac (pakovanje)
  • 1 dl ulja
  • 1 kaši?ica soli
  • 1 kaši?ica papra
  • 2 kašike vegete
  • 2 l vode

PRIPREMA

  1. Meso izrezati na kocke i pržiti na vrelom ulju. Dodati sitno sjeckan luk i jedan i drugi, sol, papar i pržiti oko sat vremena miješaju?i i pomalo dolijevaju?i vode (dinstati na laganoj vatri el.štednjak 2).
  2. Narezati krompir na krupnije kocke, mrkvu na kolutove. Sve to dodati u polugotovo, meso pa uz malo vode nastaviti kuhati.
  3. Petnaestak minuta poslije krompira i mrkve dodati i smrznuto povr?e (ovo je baš za bosanski lonac sa bamjom). Naliti ostatkom vode i kuhati još 45 minuta dok sve bude dobro kuhano i meso tako meko. Na kraju dodati vegetu i ako je potrebno soli i papra.

INGREDIENTS

  • 800 grams of beef
  • 2 onions
  • 4 cloves of garlic
  • 400grams of mixed frozen vegetables
  • 1 dl of oil
  • 1 small spoon of salt
  • 1 small spoon of pepper
  • 2 spoons of vegeta
  • 2 liters of water

DIRECTIONS

  1. Cut meet into cubes and fry in hot oil. Add thinly sliced onion and garlic, salt, pepper and fry for half an hour approximately on low to medium heat while stirring and adding some water.
  2. Add peeled potatoes cut into bigger pieces. Add medium cut carrots. Add it to half done meat and add water as needed little by little.
  3. After approx. 15 minutes after potatoes and carrots, add all frozen vegetables. Add the remaining water and let it boil for another 45 minutes until everything is well cooked and soft. At the end add a bit of vegeta, salt and pepper as needed to taste.

Zeljanica

SASTOJCI

  • 500 g tankih gotovih kora s jajima za savija?e

Za nadjev:

  • 600 g svježeg kravljeg sira
  • 4 jaja
  • 200 g kajmaka
  • 200 ml mlijeka
  • 200 ml kiselog
  • vrhnja
  • 250 g špinata
  • 1 žli?ica soli
  • papar

Za premazivanje:

  • 100 g maslaca

PRIPREMA

  1. Za nadjev jaja dobro razmutite, dodajte mlijeko, kiselo vrhnje, ocije?eni propasirani sir, kajmak, blanširan, ocije?en i nasjeckan špinat, sol i papar. Sve dobro promiješajte.
  2. Lim (vel. 35×22 cm) premažite dijelom maslaca, stavite jedan list tijesta, poškropite ga dijelom rastopljenog maslaca, složite sljede?i list tijesta i premažite dijelom pripremljenog nadjeva.
  3. Postupak ponavljajte sve dok ne potrošite tijesto i nadjev.
  4. Na kraju stavite preostala dva lista tijesta, poškropite preostalim maslacem, pa stavite pe?i u pe?nicu zagrijanu na 200°C oko 40 minuta.

ENGLISH translation

INGREDIENTS

  • 500 g thin already made jufkas (Similar to tortillas, only thinner, and may be bough at most Bosnian local stores)

For the mix:

  • 600g of feta cheese
  • 4 eggs
  • 200g whipping cream
  • 200ml milk
  • 200ml plain yogurt
  • 250g spinach
  • 1 small spoon of salt
  • and some pepper

For topping:

  • 100g of butter

DIRECTIONS

  • Mix eggs, milk, plain yogurt, feta cheese, whipping cream, thinly cut spinach, salt and pepper all together
  • Put the butter on the cook top until its watery and pour some in a pan you plan on baking the pie in. Place one jufka and pour a little butter over it (using a spoon) and then some mix using the spoon as well.
  • Repeat until you used up all jufka and the mix.
  • At the end pour a bit of butter on top and bake on 200C for approximately 40 minutes.

Cut into squares and serve!

  • 1/2 kg mekog brašna
  • 3 dcl mlake vode
  • 1/2 dcl ulja
  • malo soli
  • 60 dkg mljevenog mesa
  • manja glavica crvenog luka
  • sol,papar,vegeta
  1. od brašna,mlake vode,ulja i soli umijesite tijesto.
  2. mijesite ga na pobrašnjenoj podlozi tako dugo dok ne postane glatko i prestane se lijepiti.
  3. podijelite na tri dijela i svaki malo razvaljajte,namažite uljem i stavite na krpu
  4. neka stoji 20-30 min.
  5. za to vrijeme pripremite meso
  6. luk sitno nasjeckajte i zajedno sa za?inima dodajte u meso(možete staviti i malo sode-bikarbone).podijelite masu na tri dijela.
  7. stolnjak stavite na kuhinjski stol i jadan dio tijesta stavite na sredinu i razvla?ite lagano od sredine.
  8. kada ste dobili prozirno tijesto s jedne i druge strane stavljajte meso u manjim komadi?ima i malo pouljite.
  9. stolnjakom s jedne strane zarolajte do sredine pa tako i s druge strane.
  10. prorežite kroz sredinu tako da dobijete dvije odvojene “kobasice”.
  11. zamotajte svaku posebno i dobili ste burek.
  12. namažite tepsiju uljem složite bureke i pecite na 180 c 30 min.
  13. kada su gotovi treba ih malo poprskati sa vodom koju ste prethodno zakuhali sa malo soli.
  14. poklopite ih na 10-ak minuta da smekšaju.

Burek Recipe in English:

Ingredients:

  • 1/2 kg flour
  • 3dcl warm water
  • 1/2 dcl oil
  • little bit of salt
  • 60 dkg ground beef
  • One small onion (chopped)
  • Salt, pepper, Vegeta (you can buy Vegeta here)
  • flour, oil, warm water, and a bit of soil.

DIRECTIONS:

  1. Make a dough from flour, oil, warm water and a bit of oil.
  2. Mix it well on the flour until it becomes very firm and the flour becomes invisible.
  3. Split the tough into three small doughs and put it on a clean kitchen cloth.  On each put a bit of oil and make it into a ball and press around a bit to make it larger (such as for pizza).
  4. Let the doughs sit for 20 to 30 minutes.
  5. During the 20-30 minutes, prepare the meat (ground beef).
  6. Chop the onion very well and mix with seasonings and ground beef and divide it into three portions.
  7. Prepare your dining room table and place one piece of the divided dough on the table and with your hands gently start stretching the dough.
  8. Now that the dough is large enough and thin, put a bit of oil and small pieces of prepared meet.
  9. Once you put the meet, take one side of the Jufka (the dough you made thin) and put it over the spreaded ground beef. Then again apply some oil and ground beef, and the the other side and put over it. Do this until you get burek to be the size of the pan you plan on baking it in (tepsija).
  10. Once done, sprikle some oil into the baking pan, place the burek in it and bake on 350 degrees for approximately 30 minutes.
  11. When all done, sprinkle a bit of water on top of the baked burek and let sit for 10 minutes.
